Update to Godot XR Tools 3.1.0

The new release updates to Godot XR Tools 3.1.0 release (https://github.com/GodotVR/godot-xr-tools/releases/tag/3.1.0) and includes gloved hands with a ghost-hand effect while climbing. Additionally the red key block now makes use of hand grip-poses introduced in the new 3.1.0 release.
